Newsletter readers! Here is the pork chop recipe I was talking about in today’s dispatch. Sweet and spicy, smoky and tender. I beg Andy to make them for us all summer long. (Originally published in How to Celebrate Everything.)
Grilled Soy-Glazed Pork Chops
Serves 4
4 bone-in pork chops, about 3 1/2-4 pounds total
kosher salt and freshly ground pepper
1/4 cup soy sauce
1 tablespoon rice wine vinegar
1 tablespoon fresh lime juice (from about 1/2 lime)
1 teaspoon light brown sugar, packed
1/4 teaspoon Sriracha
Prepare your charcoal grill or preheat a gas grill to medium.
Sprinkle the chops with salt and pepper. Bring them to room temperature. In a small bowl or measuring cup, mix together the soy sauce, vinegar, lime juice, brown sugar, and Sriracha. Grill the chops over medium-hot coals, turning frequently, until cooked through, 10 to 12 minutes total. Right before you are about to remove the chops, brush them with the soy glaze and flip 4 or 5 more times until they look glazed and lacquered.
